5-ingredient creamy tomato soup: your cozy weeknight win

These cozy days of January are a wonderful time for setting deep, intentional goals, but let's be honest: it can also be exhausting! The holiday energy is gone, the weather is cold, and everyone is settling back into routines, or trying to at least!

The last thing you need on a Tuesday evening is a complicated dinner. Intentional living isn't about doing more as we’ve said many times before, it’s about choosing simplicity where it matters most, so you have energy for your family.

This 5-Ingredient Creamy Tomato Soup is the definition of intentional simplicity. It’s warm, comforting, kid-approved, and comes together in about 20 minutes, giving you back time to focus on your people, not your pots and pans.

Ingredients

This recipe relies on pantry staples and just a little bit of goodness to make it rich and creamy.

  • 3 large (28 oz) can of crushed tomatoes

  • 1 small onion, chopped (or 1 tbsp onion powder for maximum speed)

  • 2 1/2 cups chicken or vegetable broth or better yet, bone broth

  • 3/4 cup heavy cream (or half-and-half)

  • 1 tbsp olive oil

(Note: We count salt/pepper/garlic as pantry seasonings, not main ingredients!)

Simple Instructions (20 Minutes to Done)

1. Sauté the onion (3 minutes)

In a medium pot, heat the olive oil over medium heat. Add the chopped onion (or just the onion powder if you’re skipping the chopping!) and sauté until softened, about 3-5 minutes. If using fresh onion, add a pinch of salt now.

2. Simmer the base (10 minutes)

Pour in the crushed tomatoes and the broth. Stir well. Bring the soup to a gentle simmer and let it cook for about 10 minutes to allow the flavors to meld. If you like a smoother texture, you can use an immersion blender to blend the soup now.

3. Make It creamy (2 minutes)

Remove the pot from the heat. Stir in the heavy cream until it's fully combined and the soup turns a beautiful pale orange/red color.

4. Season and serve

Taste the soup and add salt, pepper, and a pinch of garlic powder as needed. Serve with crackers or, the classic pairing, grilled cheese sandwiches.

🍅 Intentional mama Tip: simplify the side

If you make grilled cheese, use butter or mayonnaise on the outside of the bread for better browning.

This soup isn't just a meal; it's a small gift of rest and simplicity you give back to yourself and your family. Enjoy the warmth, and enjoy the conversation around the table!
